Chicken Breasts with Avocado, Tomato, and Cucumber Salsa


Here’s one seriously easy dinner. The salsa helps cool the chicken, but strictly speaking it’s not really necessary. You can serve the chicken with pretty much any combination of fresh vegetables, whether they are raw in a salad or lightly cooked. The added bonus is that chicken breast plus a large helping of salsa has only 243 calories. Great food when you’re on a diet.


  • 3/4 teaspoon salt, divided
  • 1/4 teaspoon chili powder
  • 4 skinless, boneless chicken breast halves
  • 1 large, coarsely chopped seeded peeled cucumber
  • 1 cup diced tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup chopped peeled avocado
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 jalapeño pepper, seeded and finely chopped


Heat a grill pan over medium-high heat. Coat the pan with oil. Sprinkle 1/2 teaspoon salt and 1/4 teaspoon chili powder evenly over the chicken.

Cook for 6 minutes on each side or until done, and remove from heat.

Combine remaining 1/4 teaspoon salt, cucumber, tomatoes, onion, and remaining ingredients in a medium bowl, mix it well. Put it on a plate and serve.

Top Tip;

Tortilla chips will do the trick if you want some added crunch to this dinner. Either straight from the bag or you can bake them in the oven a couple of minutes.
